For the Cake:
Line a 22cmx22cm rectancular baking pan with baking paper.
Pre heat the oven
In the mixer, beat 4 eggs and 1 Cup of powdered sugar until a ribbon consistency cake batter is formed.
Then Slowly fold in 1 cup of pure, good quality Chocolate Powder. Fold chocolate until fully incorporated.
Fold in 25 grams of melted butter, until fully incorporated.
Pour cake batter onto the lined baking pan, bake until surface of cake is lightly springy to the touch, and toothpick inserted comes out clean.
In a double broiler, melt 100gr dark cooking chocolate with 50ml Fresh full cream milk, or cream. Mix together until a very smooth paste is formed. Let cool.
Remove cake from pan and baking sheet, place on a pan.
Divide cake into two equal part.
Spread 1/2 the Ganache on one side of the cake, top with the other.
Spread the remaining half of the Ganache on top of the cake, let cool.
Finish the cake with dusted Chocopowder
