This is very easy to make..


1 cup raw macaroni, cooked until aldente then shocked with ice water to stop the cooking process.

1 medium cucumber, small diced

1 cup greek yogurt

2-3 tablespoon fresh mint leaves

1 tablespoon lemon juice

Salt and pepper to taste.


  • Mix all the ingredients together, adjust seasonings, leave 2 hours in the refrigerator or overnight, topped with  chopped, salted, boiled whole eggs or eggyolks. Garnish with chopped mint leaves or mint sprigs.
